In deepest Connemara, at a famous Lutyens-esque house with a romantic and fascinating history - it has been home to people as diverse as a Gaelic chieftan and Oliver St John Gogarty, and became one of Ireland's earliest country house hotels, in 1883 - head chef Tim O'Sullivan looks after the inner man admirably in lovely dinners featuring local seasonal ingredients and notable for fresh flavours and impeccably sourced local produce, especially seafood, Connemara lamb and the seasonal herbs, vegetables and salads which are still so often overlooked in Irish kitchens...All this, plus the scent of a turf fire and a comfortable armchair, can be magic.
