In County Carlow, the cheese to look out for is the unusual (for Ireland) edam style Carlow Cheese which has been made by Elizabeth Bradley on her farm at Fenagh since 2005 and very soon gained a following.
Using the milk of a neighbouring herd, it is a mild, semi-firm raw cows’ milk cheese and is made in several flavours including basil and dried tomato, black pepper, cumin, garlic and herb, and nettle and onion.
Made in large 4.5kg wheels, it is sold at 3-6 months old and available all year. Elizabeth sells at Carlow Farmers’ Market (Sat 9-2) and you may see it in local stores and on menus in the area.
