Tucked behind a traditional red and cream painted shopfront on Parliament Street, Pierre Schneider’s cosy little daytime restaurant has long been popular with Kilkenny people for serving honest, well sourced and simply cooked bistro fare.
But it is when he opens for dinner that his talent really shows through - his evening menus are known for excellent fish dishes that are a joy to eat, and accompanied by a hotpot of excellent vegetables which is left on the table.
Until recently Chez Pierre only opened for dinner at the end of the week but, since the arrival of joint head chef Emilio Martin Castilla (formerly of Lacken House and, more recently, Bassetts of Inistioge), the restaurant is now open five nights a week.
“Fresh is best” is Pierre’s mantra and this is plain to see as the simple, clearly described, blackboard dishes emerge from the kitchen perfectly cooked and without any unnecessary frills. Dishes recently enjoyed by the Guide include a simple but delicious starter of naturally smoked haddock, marinated and served as a tian with chopped vegetables, a lovely mustard dressing and homemade bread.
A main course of fresh turbot - a fine fillet, simply pan fried and served with a fondue of tomatoes and herbs - was equally impressive. Simple, flavoursome vegetables accompany and you may finish with French cheeses, in perfect condition.
For those not in the mood for fish, other equally tempting choices might include a velvety duck liver mousse, served with chutney and salad – and, perhaps, a main course of Toulouse sausage.
Willing service by staff smartly dressed in black, and a short wine list complete the picture.
