Crisp salad of cos leaves, apple and pear with a toasted almond, walnut and natural yoghurt dressing

Pan-seared supreme of Carlow free range chicken,
roast potatoes, oatflake and apricot stuffing, cranberries, honey jus

Seared fillet of cod,
herb scented baby potatoes, lightly gingered vegetables, cardamom and citrus reduction

Baked monkfish tails wrapped in a crisp serrano ham,
potato rosti, roast kumquats, raspberry vinegar reduction

Char-grilled fillet of Kilkenny beef,
shittake mushroom and scallion creamed potatoes, cabernet sauvignon jus

buttered prawns, toasted savoury cous cous, curry and lemongrass cream

Bean cassoulet
with smoked paprika scented baby potatoes, spiced parmesan tortilla crisps
