Pan seared Irish beef; sirloin (or fillet Euro 2.00 extra) with slow roast tomato, asparagus spears, mushroom duxelle and peppercorn jus.
Pan fried turbot with ratatouille flavoured cous cous, crushed garden peas, cherry tomato vinaigrette.
Pork loin on a haricot bean salsa, carmalised apple, orange and cardamom reduction.
Open lasagne of wild mushrooms and spinach with a ricotta cream and glazed with parmesan.
Sauté scallops on a saffron and herb risotto, green beans, red wine and veal reduction.
Rack of lamb on buttered savoy cabbage, fondant potato, herb infusion and broad beans. .
