This stylish venture in the centre of Ballincollig hit the ground running when it opened in November 2016 - and not just because it's a fine venue in a prime location, but because its reputation preceded it thanks to the experience and standing of owners John and Darina Gately of The Montenotte Hotel in Cork city.
Fans who have been missing the couple's excellent riverside spot, the former Boardwalk, can now hot foot it out to Ballincollig for a taste of their special blend of relaxed hospitality, smart service and good food.
The aim is to combine the warmth and relaxation of a neighbourhood restaurant with a classic New York menu majoring on steaks and, with chef Ed McCarthy in the kitchen, you’ll find everything that you're looking for in a lovely big first floor room overlooking the main street of this lively town. They also run JD’s bar downstairs, but the atmospheric and very comfortable split-level dining room - and the delicious freshly prepared food that's served here - is what makes Republic a must-visit place.
The menu offers an abundance of tried and tested favourites - including some, such as 'JD Gately's famous chicken wings', which will be familiar to regulars at the Boardwalk - and the Grill section lists a choice of steaks and burgers which includes a Wagyu burger at €15.95 and, at the weekend, a Chateaubriand to share between two at 'market price'....Ingredients 'come from tried and trusted providers, sourced locally where possible', although there is no specific provenance or supplier list.
Being a family restaurant, the choice is wide with fish, curries (chicken or vegetable), pizza and pasta all on offer, also a section on speciality pies (seafood, shepherd's or chicken & leek, all around €15). A separate 'real food' kids menu is available too, priced by course.
Unusually, Republic offers a dessert trolley - and a very tempting one it is too, so save a little room for that sweet treat to round off your evening.
There's a small bar (spirits available, but no craft beer) and a short but well selected wine list that includes over a dozen house wines by the bottle or the glass.There is also a short Cellar Selection with more expensive wines available by the bottle only.
Service, under the direction of Restaurant Manager Susan Roche, is warm and friendly, as would be expected of this experienced team - just one of many good reasons to return.
