Appetizers

* Encrusted tuna steak with a coriander and basil dressing cooked until golden and served with a chive beurre blanc

* Shallow fried potato cakes stuffed with smoked salmon accompanied by a cucumber salsa

* "Strand" duck liver pate with game chips and home-made nectarine and onion marmalade

* Chef's salad of mixed seasonal leaves served with tomatoes and a creamy blue cheese dressing


Entrees


* Fillets of lemonsole and prawns topped with a light Waterford cheddar souffl?

* Fresh scallops tossed in butter and finished in a white wine, ginger and cream, served in a filo basket

* Monkfish "en brochette" fillet of monkfish with BBQ sauce served with herb cream rice

* Pan fried sirloin steak with garlic flowers

* Roast Dromcollogher duck stuffed with citrus fruits and served with a traditional orange sauce

* Medallions of fillet steak-Diane cooked with brandy served with a French mustard cream sauce

* Roast pork fillets stuffed with a garlic salami farcie served with a light cider and apple
