Brid Poil’s welcoming dormer house on the Aran Islands looks over the Cliffs of Moher, with views of Galway Bay on the left, and has had a great reputation for many years - she came over from Clare over twenty years ago when she married Peadar and thought this would be a nice thing to do.
Her many regular guests clearly agree - when the ferry from Doolin started, all Clare came over and are still coming so you need to book a month ahead.
A keen cook, Brid’s philosophy is ‘simple and in season’ which should be the mantra of all on the islands: roast beef, baked ham with carrots and cabbage or hake baked with onion and bay leaf are among her most popular dishes, also Darina’s bread and butter pudding.
Brid only makes dinner for guests by arrangement, and there are treats for breakfast too, including prune and apricot compotes, freshly baked scones, and home-made grapefruit marmalade.
