Having lived here for over a quarter of a century, Dirk Schonkeren is by now an honorary Mayo man - together with his wife Elaine, this Belgian chef and chocolatier was one of the pioneers in Irish chocolate making when they first set up business in 1980s Castlebar.
Now not only do they continue to produce their beautiful handmade chocolates, cakes, desserts and one-off pieces, but also run their shop and café as 'a chocolate experience'. Dirk is Ireland's only World Chocolate Ambassador, an honour bestowed by the Swiss chocolate manufacturer Barry Callebaut, whose 70-strong 'chocolate ambassador club' is dedicated to passing on their skills to others.
