The hotel itself has many historical connections - with the entrepreneur Charles Bianconi, for example, who established Ireland’s earliest transport system (the restaurant is named after him), also Charles Stuart Parnell, who made many a rousing speech here. It was also the birthplace of Thomas Francis Meagher, who became Governor of Montana; he was a pall bearer at Abraham Lincoln’s Funeral - and also the originator and designer of our national flag, the Irish Tricolour, which was first flown in Waterford in 1848.
The Granville has always had a name for good food and proudly showcases local produce, including of course the unique ‘Waterford Blaa’ bread roll, which is one of only a very small number of Irish Protected Geographical Indication (PGI) products.
