Denotes genuine Irish food culture, ie special Irish food products/companies/producers, and highlights the best places to shop for regional and artisan foods; the selection excludes obvious 'non-Irish' elements regardless of quality, eg ethnic restaurants and specialists in coffee, wine and other drinks, unless relevant to local production or history. Eat & Stay establishments are chosen for their commitment to showcasing local produce and Irish hospitality. Waterman Restaurant

With former Hadskis head chef (and previous James St. apprentice) Aaron McNeice leading the kitchen and a ready-made following, the high-ceilinged, atmospherically pared-back Waterman took no time to become one of Belfast’s hottest destinations.
Seats 50 (+outdoors). Open Wed-Thu 5-9.30pm, Fri-Sat 12-9.30pm, Sun 12-6pm. Hours may be extended. A la carte. Full bar. Cookery School (www.waterman.house). Also at: James St. (see entry). abbreviations

As part of leading chef Niall McKenna’s grand plan to create a major hospitality hub in the city’s Cathedral Quarter, he closed the excellent Hadskis on Commercial Court in 2022 and moved the whole team here to open a new restaurant at this old Bushmills bonded warehouse - an impressive Grade B listed building that is also home to Waterman House Cookery School along with conference and event spaces.

Flavour-packed ingredients-led modern European cooking is the style and, with Hadskis head chef (and former James St. apprentice) Aaron McNeice leading the kitchen and a ready-made following, the high-ceilinged, atmospherically pared-back Waterman was soon one of Belfast’s hottest destinations.
